    Default Potato Scallops!!

    method 1) After slicing your onions and potatoes place olive oil into the pan, when hot enough use a low heat and place onions into the the pan to caramelise use your own judgement for this part then remove temporarily from pan into a bowl or pan. place approx 2 tablespoons of oil and 2 knobs of butter into pan, put a layer of potatoes then onions adding salt and pepper to season and repeat untill pan full, place lid on pan on a low heat check every 5 mins lifting pan lid and removing excess water from underside of lid check it after 20 to 25 mins when ready dish out with any meat and veg you want with it. you may also decide to not cook with the butter but it will add flavour.

    method 2) place oil in pan approx 1/3rd full, slice onions and potatoes, place in pan and add salt and pepper if required to season add a little more oil to cover if needed, no need for lid just fry on a low heat. this method will crisp the potatoes more.
    You can add to these methods by adding slices of cooked meat or grilling bacon and cutting into small pieces and add to the mix
    method 1) is saute' method 2) is frying version. hope you enjoy!!
