    Default chinese noodle soup

    JAY?S CHINESE CHICKEN NOODLE SOUP

    Ingredients
    3 Red Chillis (Finely Chopped with Seeds)
    Cooked Chicken Pieces (if making your own stock, use the chicken from that)
    1 Teaspoon of oil
    1 x Thumb Size Pieces of Ginger (Grated)
    1 Garlic Clove (Crushed OR Finely Chopped)
    1 Carrot (cut into roughly 1? matchsticks)
    2 Spring Onions (Diagonally sliced into roughly ?? pieces)
    Soy Sauce
    Chicken Stock (Approx. 1 Litre)
    Dried Chilli Flakes (As Many As You Like. More Is Better ***61514
    Salt n Pepper (if required to taste)
    Medium Egg Noodles

    How To Make
    In a large pot, gently fry the garlic, ginger and chillis in the oil, to soften and release flavour, for about 5 mins.
    Add chicken stock, soy sauce, carrot, chicken pieces and Chilli flakes ***61514; to pot and simmer for about 5 mins
    Turn off heat and add Noodles. Break Noodles up with a fork when softened.
    Turn off heat and let Noodles sit for about 5 mins in stock then add spring onions.
    Season to taste if required.

    I would personally julienne the carrot and spring onion. Very finely. Chinese soups don't usually have chunky vegetables and they will have a lot nice texture.

    julienned...is that the same as cut into roughly 1" matchsticks.
    apologies. i couldn't remember the word julienne so i called em matchsticks

    think he means 1inch ,aint a matchstick,1 eighth is though,

    anyways...not to worry
    some positive feedback would be good....has anyone tried this ???....julienne...or not julienne...matchstick or no matchstick
