Shirataki noodles are popular in the japanese cuisine, and are made from a kind of potato called konnyaku. It would be complicated to make and you have better to check in asian shops to find it. Basically you can include it in japanese soups (ex miso), which would be quite delicious by mixing miso pastry with tofu, mushrooms and some vegetables. If the soup contains meat (ex: nabe) then shirataki noodles can also be included.
