Okay, so I assume you do have access to wiring diagrams, you have enough brain to understand what you are actually doing and willingness to do some experiments.
Unfortunately, I don't have _any_ coding information for Passat modules.
I can offer two options.
1) Try to go to the dealership and ask to code the ABS using factory tool. It's possible that the factory tool will identify the engine installed and code it properly. Chance of success is 15-20% I think
2) Try to upgrade the existing Jetta module to MK60EC1 one. The part number I'd offer is 1K0 907 379 BJ (Golf's module) or 1K0 907 379 BH (Passat's module, from B7 I think, I have prepared a working coding for one member from Ukraine here on DK, also US-spec B7 Passat). You probably WILL have to do some more rewiring, maybe not as much as doing conversion from Passat to Jetta. It would be very great if you could check if there's enough slack on the wiring harness to be able to connect the replacement module only, without having to mess with hydraulic plumbing, bleeding the brakes and actually installing it.
I assume you would be looking for replacement module at local salvage yards or eBay. I'd chose the seller which would offer a possibility to return the module and refund if we don't manage to code it..
Chance of success in this scenario is 55-60% I'd say.
