I would have to read out an AM29F400BT from a Smart ECU.
I checked the Xprog soft, and it can do it:
but I don't have a clue how to do it.
Any info about this one?

No way. What have you seen it is only for zgs for mercedes. The xprog read the 29f400 using the mcu from zgs, 9s12dg256. In smart ecu you did not have the same mcu and the flash is not located at the same address like in zgs
