Helloo when i make egr off from a a7 3.0 tdi from the year 2014, what physically changes i need to do to the car?

Hi,
you can blank (depends if its stuck open) or disconnect egr but nothing is "MUST" .. depends of situation.

I always recommend to install a blanking kit or just a blank gasket in order to avoid the exhaust gases from entering the intake. If the EGR valve itself fails and it is deactivated via software (with all related DTCs and, sometimes due to crappy solutions, others that do not have anything to do with the EGR system), you won't get any trouble codes. It may become a nightmare to any technician in the future. It is specially problematic in PSA engines, old 8-valve 2.0HDI and 1.6HDI engines. The valves can get open because of the exhaust backpressure, causing the described issue.
