In to a bowl sift flour and break in the fresh yeast, add the salt & sugar
Pour on the oil
mix the milk with the hot water and add to the mix.
using a dough hook on a mixer, mix for around 10 mins untill a smooth dough is produced
Put dough in to a greased bowl and cover with some cling film for about 1 hour.
emty on to a lightly floured surface and knead for 5 mins then divide in to 3 seperate balls,
put on to a tray and cover with more cling film and refrigerate for about 12 hours,
Remove from the fridge and roll out in to a 12" circle then put in to a pizza pan, cover with cling film for about 30 mins
Remove film, press the middle down with your fingers then add your toppings
bake in an over at 240deg c for 15-25mins
***I tend to vary the flour amount of flour to adjust for the humidity***
