to serve
* 1 tsp olive oil
* Freshly ground black pepper
Method
1. Fill a large pan with boiling water
2. Add the spaghetti and cook as per the manufacturers instruction
3. Heat a non stick pan with a touch of oil
4. Cut the pancetta or the bacon into small cubes and sautee until crispy
5. In a large bowl, beat the egg yolks and the parmesan until you get a creamy sauce
6. Drain the pasta one minute before you should, and add to the pan with the bacon, off the heat
7. Next add the egg mix and toss together or mix well. The egg mix will lightly cover the pasta and may scramble slightly (this is normal)
8. Serve, and top with a generous amount of ground pepper
NB. The egg mix will cook from the heat of the pasta while the dish is being served.
