Get music and apps for ipod touch

Hi Folks

I have a ipod touch and have lost itunes and the music i had in itunes due to computer crash is there any way to back the music up that is in my ipod so i don't loose it when re-syncing to itunes.

Also i notice this jailbreak thing could someone point me in the correct direction to read up about it i.e a tut or something
