How do you cook trufles or how do you prepair them to eat???

The fresher the better, i.e. no later than 48 hours out of the ground. They can be frozen for about 2 weeks or put them in a neutral oil, again for 2 weeks. This will also flavour the oil but keep the flavour in the truffle.

To prepare, just make sure you thoroughly clean the surface, remove any dirt. You don't peel them or do much else with them, just eat them raw, as long as they are clean.

Remember, you don't cook truffles, but they are very good at transferring flavour, due to the pungency. So whatever you store them with, i.e. rice, will take on the flavour well.

Try slicing them and adding them to a sauce, a soup or pasta dish. They compliment fish and chicken mostly. Or make a truffle butter by mixing unsalted butter with grated truffle.
