do they open in or out if in is there a wall behind the when open

ya could go cheap ass about it and hammer a nailinto wall and tie string to handle lol

or get some fancy hook made up that attaches to wall and can be attached to door by an eye that fixes to door

If you have a wall that you can screw the hook to, then something like these ?

Cabin Hooks - Brackets & Hooks | Screwfix.com (http://www.screwfix.com/c/ironmongery/cabin-hooks/cat840262)

Mine do exactly the same.. i would tie something to the handle but they dont open all the way to the wall :(..id use a breeze block but ive not built the step yet so id need to build a 2ft wall to sit the breeze block on lol..

But in your case,.. visit wickes or a hardware store and buy an eye bolt.. and one of these..

If you have friction stays (http://www.hafele.co.uk/Hafele35a1/Images/Standard/911.52.149P1.JPEG) fitted at the top of each door you could always tighten them, usually with an allen key, to withstand mild winds. If its for stronger winds then cabin hooks are the best bet. If you have 'flag' hinges (http://www.upvcwindow-doorparts.co.uk/Sites/18/Products/1277/TRIAD-FLAG-HINGE-TRIAD-FLAG-HINGE-0.png) check to make sure they don't foul the brickwork, the finish chips easily.
