Open the tin of mandarins and pour the juice on to a high sided plate, add the same amount of sherry to the mix. open the biscuits and place 4/5 of the biscuits in the liquid for 30 seconds, remove the biscuits and place in the dishes. Use all the biscuits up, equally dividing them between the dishes.
Whip the cream and fold in the caster sugar and the fresh/drop of vanilla. Spoon the mix on top of the wet biscuits.
Decorate the top with the mandarins and the flake, and chill for 8 hours.
You can try and swap the sherry with any other type of spirit.
