Before you place your turkey in the tin to roast, and after you have washed your bird, pour over it, a full kettle of boiling water. You will see the skin go tight.

That doesn't make it crisp, the best way is to paste it with honey and salt mixture 10min prior to taking the bird out. The oven should be in the fan mode.
