Roast the chicken carcus in the oven for 10minutes with 1/2 onion and a carrot
Place the contents of the roasted carcus in a saucepan with a pint of water and bring to the boil
Simmer for 30mins, skimming fat from the top of the stock as you go
Place meat and veg in a caserole dish
Add one can of tomatoes and the freshly prepared stock (sive it!)
Cover and roast for 1 hours.
Enjoy with crusty bread and butter.
