First cream the butter and sugar, beat the egg into the mixture. Then slowly add the flour and baking powder and beat until all the flour is incorporated
Finely chop half the dates and cut the rest in half, cover with the boiling water and add the bicarb and vanilla essence.
Now add the date mixture to the flour mixture and beat to form a sloppy batter, pour into a well greased 10?x 8? baking tin
Place in a preheated oven on gas 5 or elec 375f/190c
Bake for 40mins
While it?s baking put the toffee topping mixture in a pot and simmer for about three minutes until the sugar has dissolved
When the pudding is done cover the top with half the topping and put under a hot grill until it bubbles (careful not to burn)
Then serve with toffee topping/ cream/ or ice cream
