Can I use the white BT HomeHub that has been unlocked as a just a wireless router (set up as WDS) so I can extend my wifi range in the house

Depends.
And other such unhelpful words instantly spring to mind.

Ive got a business hub which is completely different but that has bridge mode on it.

Worst case you might be able to do it only by running wire between both routers and disabling the dhcp on the homehub.
