Put half the carrots and onions in the pan that you fried the chicken in and place the chicken breast side up, then put the rest of the carrots and onions over the chicken.
Add a Bay Leaf, Thyme, Salt and Pepper.
Then pour over the stock, and the Wine, this should half cover the chicken, add more stock of you need to.
Bring to the boil, then let it simmer for 40 mins.
Add half the mushrooms then turn the chicken over, cover and simmer for a further 30 mins
Once cooking time is finishedremove the chicken and all vegetables with a slotted spoon to a serving plate. Arrange the vegetables around the Chicken.
Return the Wine and Stock to the heat and boil it for about 8 mins to reduce.
Meanwhile, put a knob of butter in a frying pan and fry the other half of the mushrooms for about 2-3 mins. Then put with the chicken and veg. ( keep these warm ).
Seperate the egg yolks from the white and beat the yolks with a pinch of nutmeg.
Add a little of the Liquid to the eggs and beat them again, then pour into the pan of liquid, mix well, for a few seconds, shake the pan then remove from the heat.
To serve pour the sauce over the chicken and veg when served.
