put the chicken pieces into a bowl and add the marinade, and give it all a good mix.
leave to marinade for 30 minutes
Heat a wok over a high heat, until smoking.
Add the oil and swirl it around.
add the chillies, and stir. then add the garlic and ginger and stir.
Add the chicken and keep stirring for about 2 mins.
Add the sherry , away from the heat as it might flame.
keep stirring
add the spring onions and keep stirring for 45 secs.
add the prepared sauce and stir untill it thickens.
add the peanuts, stir a few times.
Done
you can serve this with rice and chips or either.
Enjoy.
