What is a JTAG cable for? I assume it is to allow you to replace the bootloader, and that I'm unlikely to need it unless I screw something up!?!

Where does it connect to and from?

It's a cable that's used to interface with the box if it dies. There's no connection, it needs to be soldered to the main board.

To be honest, you won't ever need a JTAG cable unless you severly bugger up the bootloader or flash the Gemini 4.40 image. This image had a rouge tuner driver in it which crashed the bootloader of clone dm500 receivers.

The most you'll ever need to fix the box is a null modem cable and a copy of dreamup. :)
