BMW E70 LCI 40D - Teach me how to delete EGR please

Hi, first post so be gentle and I did get the message about not just posting files and expecting a response.

I would like to learn how to delete things myself in ECU for my E70 LCI....EGR, Swirlflaps, DPF

Starting from the basics, I have only a K+DCAN cable and working BMW standard coding/diagnostics software INPA, ISTA etc. I am comfortable using these tools. So the basics:
What hardware is required
Software
How to read/ edit/ write BIN file?

Or is the only way to get someone else to do?
