I know that is possible to add language in instrument cluster VAG VDO (Golf6, Passat CC, B7, Superb, Octavia II, Leon, Altea). Can someone help me how to do it? I want to add polish language.

No, I want to add language not change.

Adding new languages can only be done by upgrading the cluster's firmware.
For Polish language you need version SW06xx or higher.
This sounds easier then it often is, so you can PM me for further details if you're interested.
