    Doh a deer

Just found a small deer at side of road, pic here
Not used to this sort of road kill, wabbits and Pheasants being the norm. Wondering the best way to go about preparing it?

Zap just told me to hang it a few weeks.. With guts in? whats best way to gut it, and how to cut it into meat sections?

I'm well used to shooting deer and gutting skinning and butchering but there always fresh

first things first you should bleed it but there's no point because its dead to long this will cause trouble wherever the deer has been injured because it will cloth so this meat is ruined the dogs will get it

follow the gutting video in another post

to skin it you will have to hang it from the roof of your garage or even better is a kids swing there's already rings to tie it to where the chains for the kids seats attach to the frame
first cut off legs below the knees on the foot side of the leg to make legs shorter and easier to hang
then make a slit parallel along the inside of tendons in rear legs to tie rope from to hang

take off skin like a jacket its the easiest way trust me

when deer is hanging trim skin in a strip from both knees on rear legs to the groin area where the deers tits would be
then do the same with front legs trim from each leg back to breast bone
then split skin along the windpipe the length of its neck
then pull skin on rear legs back over the deer towards it bum

then pull skin back off front legs
once you have the skin pulled off the rear legs and front legs the whole skin will pull down along the back and ribs and down towards the front shoulder and neck
the skin is harder to pull off here as its lower to the ground,
hold skin and stand on it and push down with your feet and it will all pull off for ya

the skin will be in good condition as its in one piece
then if ya want to try cure it and make a rug from it ya can

also dont leave it hanging to long as there is still blue fly around and they will be attracted to the bloody smell from the carcass as its not bled properly
its some of the nicest meat once cooked properly
have a look here for recipes

theres a lot more blood and guts in a deer than a rabbit and phesant
you could gut it while hanging and let it all drop down into a bucket

Gutted and skinned.. thanks to all.. a lot of shit everywhere, from the impact I guess.
Last question, maybe, how long to hang for? I have 1 week at the min, and Xmas at the max so far.
Reasonably cold amyway, but what is normal? hanging in a cold room (freezer) or like the gentry in a larder?
                  Do you cover it?

id usually hang for a week weather depending but with skin on i heard there's some Muslim sheet or something you can use when the skin is off
as i said earlier there will be a lot of clothing remove it or your carcass will go smelly and attract flies
your local butcher could help ya out big time for a small fee
he would bone it and cut it up properly he might do it for free if ya offer some meat

or there's a lot of shops closing down at the minute you could pickup a coca cola fridge or something similar and store it in that and if ya no some1 with a shop that has closed down ask them try the local recycling centre lots of fridges there to

                    some lads ive shot
