Chop all the fruit,veg, spices herbs etc to desired sizes
(many things do not boil down so always cut down to
the required size - otherwise it may not go in your
sandwich!)
Place all the ingredients in a large pan and simmer. I
do some fairly large batches which can take up to 6
hours.
