    Chocolate eclairs

    Bring the water to a boil in a pot then reduce heat and add the butter. Keep stirring until butter's melted.
    Sift the flour and a pinch of salt. add it to water/butter(in one go) and stir quickly with a wooden spoon until it forms a rough ball. (when it starts barely sticking to the pot its ready). set aside for a minute.
    Beat the eggs first then add them a little at a time to the ball with a whisk (or in your mixer), you should end up with a shiny thick paste.
    Line a couple of baking trays with greaseproof paper(i put a little butter on the paper to stop buns sticking). using a piping bag or a spatula put blobs of mix on trays.(around 1"x4", no need to be too exact, but leave space for expansion).
    place in preheated oven for 15-20 mins until golden brown then remove and pr1ck a hole in each with a skewer to release steam. put back in for a few mins then remove and leave cool on a wire tray.
    melt your cooking chocolate and smear on the buns with a spatula, when thats cool put a cut up the side and add your whipped cream. Dont eat em all in one go!!
