How do I run OLD games on windows 7?

I recently installed NFS Hot Pursuit 2 (2002) on my new computer that's running 64bit Windows 7 When I did get to play through part of a race, the graphics were extremely glitchy. About 1/2 of all of the surfaces were flashing from their actual colors to white very rapidly. My monitor runs at and un-adjustable 60hz so that could be a problem? I really want to play this without getting a headache,Help!

P.S. I want to also run Polaris SnoCross from 2001, and the original Hot Pursuit from 1998

I want to run ATF Gold which ran great on my Pentium 100 on Windows 95 but it doesn't work on XP or 7.

Windows VPC sounds like it only goes as far back as Win XP. Am I out of luck? Is VMWare my only option?
