Default E60 530D looking for help and answers

Hello, recently instead of giving the car to a mechanic or tuner I decided to take care of my car myself.

After removing the EGR, DPF, can I safely prepare Stage 1/2 with active throttle and air flow meter?

I could also remove the throttle, only I don't know whether to buy some extension of my current air intake in its place, or look for some new kit?

If I don't plan to do Stage 3 should I think about cutting out the air flow meter?

When I bought the car I got the information that the power was raised to 280, dpf / egr cut out and removed in the ECU. In fact, the egr was in place and working, and not programmed. As for the DPF it was cut out but not disabled. My adventure started when I went to a local tuner who I paid to disable the DPF from the ECU and after that, problems started happening with my car. I updated my ECU to a higher version to have a clean map and just tomorrow I want to disable the DPF/EGR from the ECU myself. I'm wondering whether to do it through winols or davinci 1.0.30. I think I'll do it quickly through Davinci but before that I'll upload my clean map so that I can prepare the file in winols for myself and have a base for conscious modification in the future.

Would there be anyone who could look at my old map in which (supposedly) the power was raised and DPF/EGR disabled and confirm that the modifications were well done there?

    Greetings
