For all kind of VAG cars with PCR 2.1 ecu you have to Unlock eep before write any modified file !

first write org back and start car after that open ecu and use unlock tool

Did you succed in puting original flash back into ECU? I think you might have a problem with your galletto tool. It might be questionable quality. If you also have kess try flashing with kess and live aside fgtech for this ecu.
but first put original back
