    OFF TOPIC:-

had a car in once, for O2 sensor fault, unplugged both sensors, live data showed them both working correctly, had it before
and since where ecu displays what it expect and what it gets.

    ON TOOIC:-

connect osliscope to sensor and regulator.

is it supermarkets fuel all the time?

Looks like high pressure pump or component on the pump like DRV breaking down .

try cleaning out drv etc also check a wiring diagram see if any two components share feed or earths etc
Today is the Tomorrow you worried about yesterday ......Was it worth it ?

Check fuel temperature sensor and wiring. Wrong pressure may be consequense wrong temperature.

I agree with mr meaty, do a back leak test on injectors. Pump could be low, then when it fires pressure goes through the roof.
