Should I choose the lowest continuity? I suppose. There are times that some eeprom pin leads directly to some pin of the MCU or goes through some electronic component and I don't know what to do in these cases.
I always remove eeprom before reading.

I know that is wise advice. But with tssop8 it was a bit difficult for me because of the separation of the pins, I imagine msop8 would be the same. Anyway, I have done some practice in tssop8 and it seems that my welding technique has improved a lot. I think I am ready to desolder and solder tssop and similar.
Only for curiosity. Could there be a problem reading directly from the board? So far all the pinouts I've gotten here have worked very well.
Those eeproms may easily loose data when reading in circuit. I always recomend unsoldering to all my clients. It is the best way because in the end it will save you time, money, hedaches and health spent on repairing damaged modules...
I also recomend to use 3.0-3,3V max for reading and programming of MSOP and VSSOP eeproms...works fine for me and instead of damaging i have repaired a lot of dashes with those type of eeprom chips...

Watch few youtube videos how to disolder, buy replacment chip to practise, Would advise to disolder it and not to read directly from the board. Quite easy to disolder them with hot station, make sure do not overheat the PCB
