It may be the most simple thing to do, but I honestly don't know what folder to FTP them too...... can you kindly advise?

If the skin comes in .tar.gz or .tar.bz2 format, you can install it my ftping it to the /tmp folder and using the manual addon menu.
If extract the files on your PC using winrar you will see folders within folders. If you want to manually install it yourself just extract the files and ftp them to the folders that they appear in the zip.
For the DM500 they will go in /var/tuxbox/config/enigma/skins. Make sure every skin you install has the corresponding pictures to go with it. These go in /var/tuxbox/config/enigma/pictures. There's a good chance the box will hang up upon reboot if there's a file missing or something isn't right so be aware this might happen.
Backup your image before trying any skins or new things.
