the above are all greyed out and cannot be selected/changed

Once you have set your location (via the blue button) the above will be set correctly as long as you have selected the correct Location.

Then
Dbox button
Service Menu
Service Scan
Make sure you select scan for TV & Radio
Make sure Bouquets/Favorites it on Update
Make sure Fast Scan is OFF

Then start scan
