Its to celebrate the life of an English slave who turned to Christianity as a means of escape from bondage, only to then return to Ireland on a crusade to slaughter a lot of Pagan heathens.
Hence the whole story of driving the "snakes" out of Ireland.
Failing to grasp the fact that the sea between the mainland and the emerald isle is way too cold to allow any snakes to survive passage between each other, there never where any snakes to begin with. Just dirty heathen sinful pagans.

All said and done its a great excuse for a piss up irrespective of its actual historical meanings.
