    tomato rice soup

    put 2 tsp olive oil, 1 finely chopped garlic clove,1 400g tin of chopped tomatoes,2 tsp salt,1 tsp black pepper,2 tbsp sugar,a couple of glugs of lemon juice into a large pot.
    bring to the boil, cover and cook out for 10 mins.
    add 1.5 pints of vegetable stock to the pot and cook for 5 mins.
    add 0.5 cups of basmati rice and stir.
    cook this for approx 10 mins or until rice is cooked.
    add water if it gets too thick.
    season to taste.
    this is better the next day as the rice soaks up all the flavour of tomatoes.
    eat..........enjoy
    dead easy tasty quick soup

    alternatively...you could omit the rice and add chilli flakes and chilli powder to make a spicy tomato soup...even quicker and easier

    can you use tinned plum tomatos instead?

      tinned plum toms are fine. just break them up a little bit
