    Proper Chinese curry paste

    1. Melt the lard and add the flour and curry powder.
    Stir well. Turn the heat very very low.


    2. Add all the other ingredients and stir well. It's
    important you try to break up the ingredients using a
    blender or a rolling pin.


    3. Keep the heat very low and continue stirring every
    10-15 minutes, for 2 hours, until the ingredients have
    broken up.

    4. Divide into 4 and freeze 3 of them


    5. To use the add 2 cups of water. Add sugar (very
    small amount), soy sauce, monosodium glutamate and
    salt.

    6. Add 1/2 teaspoon cumin, 1/2 teaspoon turmeric. put
    liquid through a sieve and back in the pot again.

    7. Make a roux with 2 tablespoon oil and 3 tablespoon
    plain flour

    8. Add slowly to liquid to prevent lumps

      Nope, talking about real Chinese curry sauce.

      Personally I cheat, and buuy a tub of concentrated paste from Wing Yip

            i get a packet of two from farmfoods for a quid its lovely just like in the chineese takeaway. iu can make a chicken curry for 4 for a fiver
