back up info needed

my daughters 3g is shutting down now and again and taking 20 minutes to restart so going to put 4.2.1 back on it with redsnow , if l back up in itunes and reinstall software and jailbreak again will all her app transfer from itunes backup ? or will the f/w overwrite and save apps anyway

restore iphone when itunes finishes restore and ask do you want
to setup as a new iphone or restore backup close itunes and then jailbreak then install appsync or installus
then restart itunes and setup as (the name of you daughters iphone )
all data should then be back
