help factory resetting iphone

i have a iphone 4 whch i got brand new saturday i have jailbroken it and alls well but today i have a a fault with the item so i rang them and they said they would replace it as i have had it under 7 days my question is i have just put it in itunes and pressed restore and it seems to have put in back to factory but has it got rid of the jailbreak altogether

Make sure you get a BRAND NEW iPhone and not a factory refurb...
