Try putting the phone into dfu mode and then connect it to iTunes.
If you want to know how to put it into dfu mode check out YouTube.

you have to set your sever to apple instead of cydia. Why do you want to remove cydia? Ultrasn0w is what unlocks your phone not cydia. If you have ultrasn0w installed, then just uninstall it. If you are looking to deactivate your phone so that you can be officially unlocked, just run redsn0w and re-jailbreak. Where it asks to install cydia, uncheck that box and check deactivate. your phone will start the activation process over again and make sure you connect with iTunes. It will then give you the Congrads screen I think you are looking for.

You can also just put a sim from a different carrier in and it will unlock. There is no restore needed. Best to keep a jailbroken phone vs. moving to 6.0.1
