If you mean the "iPod touch" then you just hold down an icon until it wobbles, then hold it down while dragging it to the right until the page changes, if you come to the end of your pages just keep dragging it until it makes a new page.

I've looked into how to get more than 11 pages (180 apps) visible and it seems the only way is to jailbreak and install 5 columns and/or 5 rows to have more icons on each page. I couldn't find a way to have more than 11 pages.
