It will yes, but you should back up your SHSH files before jailbreaking it. Just in case you need to revert back at any time. And there are plenty of tuts on adding cydia if you dont get it added automatically.

Yes its wise to back them up before jailbreaking. And stick with the itunes you have, I believe the newest itunes removes the jailbreak.
