I have XP7 ultimate, with SP1 and all updates slipstreamed.
Updates to end of august from SP 1 here:

x86 - http://hotfix.chris123nt.com/Windows...6-28.8.2011.7z
A few extra configurations via registry:
You can add your CD Key choose which drive to format, put what username and password you want on, any backgrounds, themes, screensavers and silent apps (google there are plenty around)
Forgot to mention use a driver backup utility and backup your drivers they can also be added.
You can remove any services, drivers, languages etc you dont want to load or any parts window app you really dont have use for.
This way you always have a good install cd (or USB Drive), that you can use, backups are quicker as you only backup data.
and installs if done correctly you can leave pc to do it all itself.
You will also need to download the WAIK (windows automated install toolkit)
There is a lot more you can do, but that should keep you entertained for now

nLite - Deployment Tool for the bootable Unattended Windows installation
NLite is mainly for Vista
