    Ok after a bit of research. Plex (as a company) do not capture or store any personal location data or any data with regards as to what is stored on any local machine. The plex client and server software are just modules with all info keep on the local machine, which is why server owners can see what's going on. Just make sure you don't allow it to collect any third party data from your server settings.
