I'm using DreamBoxEdit 4.1.0.1 and after downloading the bouquets from my box, some of the channels have a small padlock next to them Does anyone know what it means, it isn't parental lock as they're highlighted red.

It means that there have been Extra parameters entered, double click on an entry and have a look in the bottom right.
