old images?? curious

just being curious,
but when u flash a new image on, what happens to the old one? is it stored somewhere, using up memory? or the new flash whipes the box clean.
and can u have a few diffrent images on the box. (is that a barry allan, or am i getting it wrong? )
and when i do flash a new image, how do u do a back up, for you bouquets, etc!! on the old image?
just every time i flash i end up, going trough it all again.
did read the stickys, but couldnt find owt.
questions questions.

If you have hdd fitted you just do backup settings and when you upgrade image, it will ask you to restore settings on first tome boot, this way all your tuner config and bouquets etc are still there
